I just have to add Medal of Honor to the Easy list.. I have nearly got the full 1000/1000 gamerscore in just 3 nights sitting. There's a bit to play, but heck if i can do it so can you all.

one easy one i didnt see on here was madden 2007. all you gotta do is start a career/season mode, then sim the whole season. put sim games to max, 12 min quarters, etc, to get the most out of it. do this for a few years in the career and you will get several achievements, without ever playing the game. kind of a cheap way to get em, but if you really want the points, thats one way to do it.
