Wow, no one seems to know for sure, but here are a couple ideas.
over heating of course, well with the system in good ventilated area and even a intercooler why should it overheat?
Well there is talk and pics of the substance that goes between the heat sinks and chips being applied incorrectly allowing the chip to over heat because it is not transfering heat to the heat sink as efficiently as it is suposed to, like a radiator with lots of airflow, the car will still over heat if the water is not flowing as it is suposed to. Some consoles have a metal strip between the chip and sink while others do not. is the metal strip suposed to be there to help with heat transfer or is is suposed to be removed to allow better heat flow.? dont know, but do remember seeing something on this subject several months back. that it was suposed to be removed when the system was assembled but the tech did not do so. something like that.
another suspected cause. a guy that had our problem sent his in and realy pressed the tech on the phone for an answer, stating that this is very common and you must know what the problem is. finely the tech just said it was most likely something to do with the dvd-rom. that MS had 3 suppliers for the dvd-rom and one of them was not quite up to par with the systems requirements, that would mean 1/3 or xbox's have the defective dvd-rom if true, and seems to match the number of people complaining about freezing issues.
I would suggest if anyone has already opened thier xbox and needs to send it in for repairs, to copy down the serial numbers of all the components, check if you have foil or not, maybe even make a unnoticeable mark of some kind on both your chips, disc drive, fans, motherboard etc, and then when you get it back see what was changed out. that may be the only way we will realy know.
