You gotta be carefull using acryllic since its burn point is very low and the heat put out by a 360 if in close proximity can cause it to blacken and bubble. Be sure to pay the extra couple of bucks and get the heat resistant acryllic. I made a bunch of stuff in highscool shop out of acryllic and its amazing how quick it will start to melt or blacken.

Though plex-glass is fine, If it was my case I would go for actual glass. Far less scratch resistant and always just looks better. Easy to clean and no worries of heat damage.
You can go to most hardware stores and find small panes of glass for sale. Some places can cut the glass for you.
As for mounting it, not sure. My first thought would be using a small dab of an adhesive on each corner of the glass, or more if you like, of a good adhesive like the ones that come in 2 tubes and you mix the two fluids to get a paste, dries hard in 15 minutes or so.
The guy at the hardware store can help you out if you let him know what you want to do.
Its worth the extra work to get the great look of glass.
